Caffeine rush @ Sensory Lab

Sensory Lab
297 Little Collins Street
Melbourne VIC

I often wonder, what would happen when science meets coffee.  To me, making coffee is like an art plus a bit of science.  The perfect cup of coffee comes from the good coffee beans, right temperature of the water, good equipment and the skills of the barista.  When all these components come together, then there will be a good cup of coffee for you to enjoy.  However, since human do not taste with just one sense, i.e. taste, some good coffee also comes with a nice latte art, where it becomes the food for eye.

Sensory Lab is a place where science meets coffee.  It doesn't serve up just regular coffee, i.e. latte, cappuccino, flat white, etc, it also serves other types of coffee that derived from different method of extractions.  The cafe is pretty hip and open space, where you can see all the activities happening there.  Especially with the Syphon brewer, it made me feel like I was back in the school lab looking at the equipment with an excitement.

The cafe splits into two section, the retail coffee beans and equipment and the cafe itself.  If you want to try take away coffee, just head to the take away window outside, but if you want to sit in and slowly enjoy the coffee, then just sit down and the staff will come to you.  For those whom extend the love of caffeine to their houses, Sensory Lab also offer many types of coffee beans and equipment.

After wandering in Sensory Lab for a while, Miss P and I managed to find a table.  Miss P ordered the Syphon coffee with Honduras Pino de Oro, while myself opt for the usual Latte.  My latte came out first with lovely latte art on the top.  Judging from the sight, the coffee was nicely made, the steamed milk didn't have any large bubbles.  The milk was nicely steamed and had a nice creamy texture to it.  The layer of foam on top of the latte was just right, not too much like a cappuccino or too little to be a flat white.  The taste of it was really nice - smooth and creamy coffee without any bitterness, rather, this latte gave out a sweet taste of the creama and the espresso.

The Syphon with Honduras beans was next on the tasting list.  It was served in the unique container which was used in brewing the Syphon.  Since both Miss P and I had never tried coffee from Syphon brewer before, we both were very excited about it and and couldn't wait to take a 'slurp' of the coffee.

The moment it was poured out of the canister, the aroma of freshly brewed coffee hit us in the instance.  It was a sweet caramelised smell with a hint of coffee.  Miss P told me that after the first slurp, her mouth was fully covered with the aroma and the sweetness of the coffee.  The Honduras beans also gave out citrussy taste, with a hint of pineapple and passionfruit.  There wasn't much of the bitterness of the coffee that was extracted from the Syphon.  Our caffeine rush afternoon was fulfilled by the coffee produced by Sensory Lab team.  Both of us were mesmerised by the taste of it that left lingered in our mouths.  I would say it is a definitely must visit cafe if you are in need of caffeine like I do.
